One of the best things about Summer is the amazing fruit. And fortunately, my kids love fruit. They can eat bowls of strawberries in a single sitting. My middle child is practically made of watermelon! One fruit that is often overlooked, but that is delicious, healthy (full of beta-carotene and fiber), and easy for kids to eat is the apricot.
Apricots are the perfect size for little hands, and they are so easy to pry open to remove the center pit. The girls love them so much that I have to buy at least two cartons of organic apricots at a time for them to even last more than a day or so. These yummy pint-sized fruits are only available for a short time each year, so make sure to grab some while you can.
